The Swamp Head Brewery, founded in Gainesville in 2008, focuses on using local Florida ingredients in their craft beers. For example, their Wild Night is a light honey cream ale that showcases local Florida honey. Wild Night can be found year round, along with a few other choice brews. Big Nose IPA, made with spring water from the Okefenokee Swamp, the feisty Stump Knocker pale ale, and the Cottonmouth Belgian Witbier are other brews you can find throughout the year. Rounding out the list is the Midnight Oil. This stout combines the traditional English oatmeal stout with barley, chocolate wheat malt and an intense dark roast coffee.
While those few manage to stay front and center all year, there are several others who are seasonal and those who make random, surprise appearances. One seasonal favorite is the Hoe Hoe Hoe. Using the Cottonmouth as a base, they add a touch of the holiday season by adding Florida orange blossom honey, ginger, and cranberry. For a seasonal IPA, they offer Day Trippin’, which is brewed with four different hops, adding depth and making it a favored choice for a day at the beach.
Offering several beers randomly throughout the year creates a special grouping of beer. Many of them are known for being different, your not so usual pint. One example is the Chipotle Smoke Signal. As the name suggests, this porter give the smoky flavor of peppers. Another stout with a creative twist is the Chocolate Orange Udderly Calm, featuring semi-sweet chocolate and orange zest.
Tuesday nights are a fun time to be at the brewery. Creative minds get together and make special brews. Whether they are just one time only offerings, or potential future recipes, this is the night to try some crazy beer. Tours are offered on a first come, first serve basis.
